Ayam Betutu Gilimanuk: Jembrana (specifically Gilimanuk) is the spiritual home of Ayam Betutu. Unlike the steamed versions found elsewhere, the original Gilimanuk style is famous for being incredibly spicy and served with a rich, watery yellow broth, crunchy fried peanuts, and plecing kangkung.
Lawar Klungah: A dish unique to this regency. While most lawar uses vegetables or meat, Lawar Klungah uses the soft shell of very young coconuts. It is chopped, boiled, and mixed with Balinese spices and minced meat, resulting in a tender, savory texture you won't find anywhere else.
Lontong Jukut Serapah: A favorite local breakfast or snack. It consists of triangle-shaped rice cakes topped with various steamed vegetables (like spinach and papaya leaves) and smothered in a thick, yellow sauce made from turmeric and telengis (a byproduct of traditional coconut oil making).
Jajan Bendu: A traditional snack made from glutinous rice flour filled with grated coconut and palm sugar, wrapped in a banana leaf. It’s light, chewy, and perfectly sweet.
Ikan Bakar Medewi: Since Jembrana has a long coastline, the grilled fish here is exceptionally fresh. In the Medewi area, try the seafood seasoned with local sea salt and served with a fiery sambal tomat.
